Red snapper's a fan favorite here in the Gulf. These beauties can grow up to 3 feet and 35 pounds, but most folks catch 'em in the 1-2 foot range. You'll find red snapper hanging around structure in deep water, usually 100-300 feet down. The season's pretty tight, typically June and July, so we make the most of it. Anglers love targeting these fish for their hard-fighting spirit and excellent taste. When you hook a big one, be ready for a workout! To catch 'em, we use heavy weights to get down deep. Live bait like cigar minnows or squid works great. Here's a local tip: if you can find some pigfish or pinfish for bait, you might just land yourself a trophy snapper. Watch out when you're reeling 'em in – they like to make a run for cover and can tangle your line if you're not careful. But when you see that bright red color coming up from the deep, you know the fight was worth it.
Mutton snapper's a real treat to catch off Biloxi. These fish usually run 15-20 inches, but can get up to 30 pounds if you're lucky. You'll find 'em around reefs and rocky bottoms, typically 100-200 feet deep. They're solitary creatures, so when you hook one, it's often a good-sized catch. Spring and fall are prime times, especially during full moons when they gather to spawn. Anglers love muttons for their fight and their flavor – they put up a solid battle and taste great on the dinner table. To land one, fresh bait is key. I like using a knocker rig with a light sinker to let the bait drift naturally. Chumming can bring 'em up, then you can try flies or jigs. When you see that flash of pink coming up, you know you've got a mutton on the line. One local trick: if you're fishing shallow, let your bait drift in the chum slick with little to no weight. Muttons can't resist that setup.
